Green Grape Italia

A bit the same story as our Blueberry lambic. We had a full pallet of surplus delicious Italian green grapes. I like to snack grapes like anyone, but this was perhaps a bit much. Add it to lambic it is. The result is, permit some bragging, quite the happy marriage.

This fruit lambic has about 400 gram of green grapes per liter of lambic. After fermenting for four months there is a second fermentation in the bottle, producing those lovely bubbles. The acidity is a bit less outspoken than most lambics because of the extra sugar in the grapes, but of course unmistakably still lambic.
